These Loaded Twice Baked Potatoes combine crisp potato skin shells with a creamy mashed potato filling that’s loaded with bacon, green onion and cheddar cheese. They’re a potato-lover’s dream!


Ingredients

  • 6 medium Yukon Gold potatoes, scrubbed
  • Extra-virgin olive oil, for rubbing potatoes
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1/2 cup real bacon bits, divided (see note on baking bacon)
  • 1 and 1/2 cups shredded sharp cheddar cheese, divided
  • ⅓ cup sliced green onions, divided
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste


Instructions

  1. Preheat your oven to 375°F (190°C). Thoroughly scrub the outsides of each Yukon Gold potato. Rub each potato evenly with extra-virgin olive oil and then poke it several times with a fork to allow steam to escape during baking.
  2. Place the oiled and pierced potatoes on a rimmed baking sheet. Bake for 45 minutes to 1 hour, or until the potatoes are completely soft when pierced with a fork. Remove them from the oven and let them cool for about 20 minutes, or until they are cool enough to handle comfortably. Do not turn off the oven.
  3. Once cooled, carefully slice each potato across the top, removing about 1/8 inch to create a stable “baked potato bowl.” Gently scoop out the soft insides of the potatoes and transfer them to a medium mixing bowl, making sure to leave a 1/8-inch thickness of potato flesh attached to the skin to maintain its structure. Return the hollowed-out potato skins to the oven for about 5 minutes to crisp up their exterior, which will make them sturdier. Keep the oven on.
  4. Meanwhile, in the mixing bowl with the scooped potato insides, add the sour cream, buttermilk, and softened butter. Using a stand mixer fitted with the paddle attachment or a handheld electric mixer, beat the mixture until it is smooth and creamy.
  5. To the creamy potato mixture, stir in ⅓ cup of the bacon bits, 1 cup of the shredded cheddar cheese, 2 tablespoons of the sliced green onions, kosher salt, and freshly ground black pepper until all ingredients are well combined.
