Transform your morning with these incredible Breakfast Nachos! Ingredients

  • 1 bag (approx. 10-12 oz) tortilla chips or home-baked tortilla chips
  • 1 (16 oz) can refried beans
  • 2 cups shredded Monterey Jack & cheddar cheese blend
  • 1 lb cooked breakfast sausage, crumbled
  • 6 large scrambled eggs
  • 1.5 cups cooked breakfast potatoes, diced
  • 6-8 slices baked bacon, chopped
  • 1/4 cup pickled jalapeños, sliced
  • 1/2 cup prepared pico de gallo
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup cotija cheese, crumbled
  • 2 lime wedges
  • 1/2 cup prepared guacamole
  • Hot sauce, to taste


Instructions

  1. Preheat oven to 400°F (200°C). Line a large, rimmed baking sheet pan with aluminum foil and spray generously with non-stick cooking spray, or simply spray the pan generously without foil.
  2. Spread each tortilla chip with a thin layer of refried beans. Arrange the bean-covered chips in a single layer, close together, on the prepared sheet pan. Sprinkle each chip with a little of the cheese blend. Top each chip with some crumbled breakfast sausage, scrambled eggs, diced breakfast potatoes, and chopped bacon. Sprinkle another generous layer of cheese all over the toppings, then place a slice of pickled jalapeño on top of each chip.
  3. Bake the nachos for 15-20 minutes in the preheated oven, rotating the sheet pan halfway through. Continue baking until the cheese is thoroughly melted, bubbly, and starting to turn golden brown in spots.
  4. Remove the nachos from the oven and let them rest for a few minutes. This allows the cheese to set slightly. Before serving, sprinkle generously with fresh pico de gallo, chopped fresh cilantro, and crumbled cotija cheese. Serve immediately with lime wedges, creamy guacamole, and hot sauce on the side for an extra kick.
