Ingredients

Crust:

  • 1-3/4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup plus 2 tablespoons cold butter, cut into pieces
  • 1/4 cup ice water

Filling:

  • 8 McIntosh apples, peeled, cored and sliced (or a mix of your favorite baking apples)
  • 1/2 cup all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1-2/3 cups sour cream
  • 2 teaspoons vanilla extract
  • 1 large egg

Streusel:

  • 1 cup walnuts, chopped
  • 1/3 cup granulated sugar
  • 1 tablespoon cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • Pinch of salt

Instructions

  1. For the Crust: In a large bowl, combine the flour, sugar, cinnamon, and salt. Cut in the cold butter using a pastry blender or two forks until the mixture resembles coarse crumbs. Gradually add the ice water, tossing with a fork until the dough is evenly moistened and just comes together. Form the dough into a ball and flatten it slightly. On a lightly floured surface, roll the dough to about a 1/4-inch thickness, forming a circle large enough to fit your pie plate. Carefully transfer the dough to a 10-inch pie plate. Trim off any excess dough and pinch the edges to create a decorative crust. Set the prepared pie crust aside.
  2. For the Filling: Preheat your oven to 450°F (230°C). In a large mixing bowl, combine the peeled, cored, and sliced apples, sour cream, sugar, flour, egg, vanilla extract, and salt. Mix gently but thoroughly until all the apples are well coated. Spoon the apple filling mixture evenly into the prepared pie crust. Place the pie in the preheated oven and bake for 10 minutes at 450°F (230°C). After 10 minutes, reduce the oven temperature to 350°F (175°C) and continue to bake for an additional 40 minutes, or until the filling is golden brown and appears slightly puffed.
  3. For the Streusel: While the pie is baking its second stage, prepare the streusel topping.
