Creating Colorful Cake Mix Pancakes: A Simple & Sweet Recipe
These Cake Mix Pancakes are a game-changer for any festive breakfast. The secret ingredient – cake mix – not only infuses the pancakes with delightful sweetness but also adds a fantastic pop of color, making them extra special for occasions like Valentine’s Day. For our romantic red and pink theme, I specifically chose red velvet and strawberry cake mixes, which lend themselves beautifully to the holiday aesthetic. They’re incredibly tender, perfectly sweet, and wonderfully vibrant.
To make these deliciously colorful pancakes:
First, gather your ingredients. In a large mixing bowl, combine one box of your chosen cake mix (strawberry for pink, red velvet for red), all-purpose flour, and baking powder. Give these dry ingredients a quick whisk to ensure they’re well combined. Next, add your wet ingredients: beaten eggs, milk, and oil. Whisk everything together until the batter is smooth and free of large lumps. A few small lumps are perfectly fine, but you want a consistent, pourable texture.

Once your batter is ready, heat a griddle to medium heat. It’s crucial to get the temperature right for evenly cooked pancakes. Before pouring your first batch, and in between subsequent batches, lightly spray the griddle with cooking spray to prevent sticking and ensure a beautiful golden-brown finish.
Scoop out ¼ cup portions of the pancake batter onto the hot griddle. Give them a little space to spread. Let them cook undisturbed until you start to see small bubbles forming on the surface of the batter and the edges begin to look set, which usually takes about 2-3 minutes. This bubbling indicates that the underside is perfectly cooked.
Carefully flip each pancake using a spatula. Cook for another 1-2 minutes on the second side, or until the pancake is golden brown and cooked all the way through. Repeat this process with the remaining batter, ensuring each pancake is cooked to perfection. Keep the cooked pancakes warm in a low oven while you prepare the rest of your board components.

Mastering Heart-Shaped Pancakes for a Romantic Touch
Elevate your Valentine’s Day breakfast with adorable heart-shaped pancakes! This technique is surprisingly simple and adds an incredibly charming touch to your pancake board.
Begin by heating your griddle to medium heat. The consistent heat is key to even cooking. Next, carefully place a heart-shaped cookie cutter (or several, if you want to speed up the process) directly onto the hot griddle. It’s important to choose metal cookie cutters that can withstand the heat. Generously spray the inside of each cookie cutter with cooking spray to ensure the pancake batter doesn’t stick.
Pour enough pancake batter into each cookie cutter to fill it about ¼ of the way up. Remember, the batter will rise as it cooks, so avoid overfilling. Allow the pancake to cook until you see bubbles forming on the top surface and the edges appear set, which typically takes about 2-3 minutes.
Once the first side is cooked, it’s time for the magic moment. Using kitchen tongs (and never your bare hands, as the cookie cutters will be very hot!), carefully grab the side of the cookie cutter and gently lift it straight up and off the griddle. At this point, the pancake should have held its beautiful heart shape.

With the cookie cutter removed, use a spatula to flip the heart-shaped pancake and cook for another 1-2 minutes until it’s golden brown and cooked through. Continue this process with the remaining batter to create as many charming heart-shaped pancakes as your board desires. Utilizing multiple cookie cutters simultaneously will significantly speed up your pancake-making operation, allowing you to build your board faster and enjoy your Valentine’s Day morning.

Assembling Your Stunning Valentine’s Day Pancake Board
The art of building a pancake board lies in its appealing arrangement and bountiful presentation. A well-organized board not only looks incredible but also makes serving and enjoying the meal a breeze. Here’s how to create a visually stunning and utterly delicious Valentine’s Day Pancake Board:
- Preparation is Key: Start by washing and slicing all your fresh fruit – blueberries, raspberries, bananas, and those delightful heart-shaped strawberries. Having everything prepped and ready will make the assembly process smooth and enjoyable. At this stage, also set out your syrups, butter, Nutella, peanut butter, and chocolate chips in their designated dishes or jars.
- Bake the Bacon: Begin baking your heart-shaped bacon. Baking ensures even crispiness and allows you to prepare other elements simultaneously.
- Pancake Perfection: While the bacon is sizzling in the oven, start making your Cake Mix Pancakes. Whether you opt for classic rounds or the charming heart shapes, ensure they are cooked to fluffy perfection.
- Keep it Warm: As components finish cooking, you’ll want to keep them warm. Once the bacon is done, reduce your oven temperature to a low 200°F (95°C). Transfer the cooked pancakes and baked bacon to the warm oven. This ensures everything stays toasty and inviting until you’re ready to serve.
- Board Arrangement: Now for the fun part – arranging your board! Choose a large serving board, like a 24” x 18” wooden board, as your canvas. Begin by placing your small bowls filled with goodies strategically around the board. These include bowls of heart-shaped strawberries, a medley of mixed berries, a cloud of whipped cream, an assortment of chocolate chips, vibrant M&M’s, and whimsical heart-shaped sprinkles. Also, place small jars or dishes of syrup, Nutella, and peanut butter.
- Add the Stars: Next, artfully arrange your warm, cooked pancakes and the crispy heart-shaped bacon. Stack pancakes in inviting piles and nestle the bacon among them, ensuring every element is easily accessible and looks abundant.
- Final Touches: Complete your masterpiece by scattering the sliced banana and placing softened butter around the board, filling any remaining gaps to create a lush, overflowing effect.
- Serve with Love: Present your magnificent Valentine’s Day Pancake Board immediately while everything is wonderfully warm. Gather your loved ones and enjoy this delightful, love-filled breakfast together!

Cake Mix Pancakes Recipe
- Author: The BakerMama
- Prep Time: 5 min
- Cook Time: 20 min
- Total Time: 25 minutes
- Yield: about 20 pancakes
Description
Pancakes made with flavored cake mix add a festive touch to breakfast!
Ingredients
- 1 (15.25 ounce) box dry cake mix (red velvet or strawberry)
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- 2 cups milk
- 1 teaspoon vanilla
- 2 large eggs, beaten
- 1/3 cup canola oil
Instructions
- In a large bowl, whisk together the cake mix, flour, baking powder, beaten eggs, milk, and oil until combined and smooth.
- Heat a griddle to medium heat and spray with cooking spray before and between each batch of pancakes.
- Scoop ¼ cup portions of the batter onto the hot griddle and cook until the top of the batter just starts to bubble, about 2-3 minutes. Flip and cook on the other side, about 1-2 minutes until the pancakes are cooked all the way through.
For Heart Shaped Pancakes
- For heart-shaped pancakes, heat the griddle to medium heat. Place a heart-shaped cookie cutter (or several) on the hot griddle and spray the inside generously with cooking spray. Pour in enough pancake batter to fill just ¼ up the inside of the cookie cutter. The batter will rise as it cooks, so you don’t want to fill the cookie cutter up too much. Let the pancake cook until the top of the batter just starts to bubble, about 2-3 minutes.
- Using kitchen tongs, carefully grab the side of the cookie cutter (don’t use your hands as the cookie cutter will be very hot!) and gently pull it up and off the griddle. The pancake should hold its heart shape at this point.
- Using a spatula, flip the pancake and cook another 1-2 minutes until cooked all the way through. Repeat with remaining batter to make as many heart-shaped pancakes as you desire. Having several heart-shaped cookie cutters cooking pancakes at once will make the process go quicker.
