- Combine Wet and Dry & Add Bananas: Place the self-rising flour in a large mixing bowl. Create a shallow well in the center of the flour. Pour the whisked wet ingredients into this well. Stir gently with a spoon or spatula until the ingredients are just combined. Avoid overmixing, as this can lead to a dense cake. Finally, fold in the mashed ripe bananas until they are evenly incorporated throughout the batter.
- Bake the Cake Layers: Divide the banana cake batter evenly between the two prepared 6-inch cake pans. Self-Rising Flour Substitute: No self-rising flour? No problem! You can easily make your own. For 2 cups of self-rising flour, simply combine 2 cups of all-purpose flour (or whole wheat flour for a slightly nuttier flavor), 3 teaspoons of baking powder, and 1 teaspoon of salt. Whisk these ingredients together thoroughly before using them in the recipe to ensure even distribution.
Choosing Ripe Bananas: The key to a naturally sweet and moist banana cake lies in using very ripe bananas. Look for bananas with plenty of brown spots on their peels – these are sweeter and mash more easily, contributing significantly to the cake’s flavor and texture.
