  3. Remove the caramels from the oven. While they’re still warm and pliable, slightly flatten each caramel into a circular shape that will fit the size of the wafer cookies. Place each flattened caramel directly on top of each cookie on the prepared sheet pan.
  4. Place the sheet pan of assembled bites in the freezer for 15 minutes to flash freeze them. This crucial step firms up the caramel, making the bites easier to coat in chocolate.
