Step-by-Step Guide: How to Assemble Your Easter Bunny Signature Board

  1. Crafting the Brie Bunny: Start by placing one brie wheel slightly lower right of the board’s center to form the bunny’s body. Position the second brie wheel directly above it to create the face. This arrangement sets the stage for the star of your charcuterie board.
  • Take the third wheel of brie and carefully cut out two long oval shapes to resemble bunny ears. With the tip of a knife, lightly score an inner oval on each piece, then gently hollow out a shallow well without cutting through. Spoon raspberry preserves into the center, leaving a white brie border around the edges. Place the ears above the wheel for the bunny’s face.
  • Place the mini brie round to the bottom right of the brie bunny’s body for the bunny’s tail. This adds a touch of whimsy and completes the bunny’s overall shape.
  • Add blueberries for the eyes and a raspberry for the nose. Using some of the remaining rind from the third wheel, trim two small oval shapes to resemble bunny teeth and place them just below the raspberry nose to create the mouth. Add three chives on either side of the raspberry for whiskers. These small details bring the bunny to life and add to its charm.
  • Using three slices of salami, overlap two slices in the center and gently bunch them so the sides flare out to form the bow shape. Fold the third slice inward on both sides to create a narrow strip, then wrap it around the center of the bunched slices to form the middle of the bowtie and secure in place. Set the salami bowtie between the face and body. The salami bow tie adds a playful touch and a pop of color to the bunny.

2. Place the raspberry preserves, spinach dip, honey and mini chocolate eggs in mini bowls and arrange them across the board.

3. Shape cheddar cubes into a carrot silhouette in the bottom left corner. Add fresh parsley at the top to resemble carrot greens.

To maintain freshness, wait to add the crackers, nuts, and chocolate candies until just before serving to ensure they remain crisp. Cover the assembled board with plastic wrap or foil and refrigerate until ready to serve.

When ready to serve, add the crackers, nuts, and chocolates, and allow the board to sit at room temperature for about 30 minutes. This allows the cheeses to soften slightly, enhancing their texture and flavor.

Alternatively, you can prep individual components ahead of time instead of assembling the entire board. Slice the havarti, cube the cheddar, cut the bunny ears, and wash and prepare the fruits and vegetables in advance. Store everything in airtight containers in the refrigerator. Meats are best arranged the day of serving but can be prepared a few hours ahead if needed. Having everything washed, cut, and portioned streamlines the assembly process, making it quick and stress-free.
